Keto Granola | Keto Raspberry Parfait

For Granola:
1 cup pecans (roughly chopped)
1 cup walnuts (roughly chopped)
1 cup almonds (roughly chopped)
1/4 cup butter
1/2 cup chocolate chips (sugar-free)
1/2 cup desiccated coconut
1/2 cup sunflower seeds
1/4 cup Swerve (or any other sweetener)
1/2 cup ground flaxseeds
1/4 cup hemp seeds
1 tbsp vanilla essence
1 egg white

For Raspberry sauce:
2 cups frozen raspberries
1/2 cup water
2 tbsp chia seeds
5 tbsp swerve (or any other sweetener) (adjust to taste)

For Parfait:
Greek yogurt
desiccated coconut
raspberry sauce

– Combine all the ingredients and spread mixture onto a baking sheet and bake in an oven preheated to 325F
– Once baked, break the granola into crumbles and store in an air-tight container.

Raspberry sauce:
– In a pan, heat 1/4 cup water and frozen raspberries
– In a separate bowl, soak 2 tbsp chia seeds in 1/4 cup water and mix well and leave aside
– Once the raspberries fully cook through (takes about 15 mins) and breakdown completely, add sweetener and soaked chia seeds and mix well. Remove from heat and let cool down completely
– Once cooled, place in an airtight container. Store in the refrigerator for up to 4 days.

– Layer raspberry sauce, greek yogurt, granola, greek yogurt, raspberry sauce and some desiccated coconut (in the same order) and your parfait is ready!
