Happy Saturday and happy final day of my “Vital Recipes and Not-So-Vital Facts” with @vitalproteins! Today is the easiest low-sugar, good-fat dessert that I have used forever: Chia Pudding.
One to two spoonfuls of this and my sweet tooth is GONE. It is perfect for those cutting sugar in my January 2nd EmFit Challenge!! Adding in collagen of any flavor can boost the nutritional value so easily to make sure you are getting enough protein along with those good fats.

Vital Proteins Chia Pudding:
In a mason jar, combine 1/2 can full fat coconut milk (use full can for lots of servings), 4-5 tablespoons chia seeds, 2-3 tablespoons honey or maple syrup (try to not use too much, and maybe add stevia drops if you have them!), 1 serving @vitalproteins Matcha Collagen or unflavored collagen, and any toppings you would like. I sometimes add pure cacao, blueberries, or dairy free chocolate chips. Shake it up, put in the fridge for 30 minutes, and once it is “pudding” texture, enjoy!
